First Course - Tuna Tartare - Fresh local black fin tuna cubed over diced avocado & dressed in a citrus, soy, sesame drizzle, served with crispy wonton chips
Second Course - Beets & Blue - Roasted beets served over baby arugula, pickled red onions & cherry tomatoes with a housemade blue cheese dressing, topped with crumbled blue cheese
Third Course - Lobster Bisque - Creamy lobster bisque made with a 5-day lobster stock & fresh cream with a hint of sherry, topped with chunks of butter poached lobster
Fourth Course - Beef Wellington - A petite filet mignon with a mushroom duxelle wrapped & baked in puff pastry, served with Fundant potatoes, a horseradish cream & red wine reduction
Fifth Course - Deconstructed Caye Lime Pie - Housemade Caye Lime ice cream, layered with a graham cracker crumble topped with Chantilly cream & a swirl of raspberry coulis
